It is a little hard to say which is the "best" because it really depends on the student's preferences and research interests but in my opinion, You can go for Geeta University as it is the best University for in NCR. I think you should go for B.Sc because you have 2 years of gap and the syllabus of B.Tech is li'l bit vast than B.Sc.
You can get many Government and Private Jobs after doing B.Sc.
Just take the right branch in which you are better than others.

Of course you can, but for that, you need to publish at least two papers in journals, in publications and need to qualify for CSIR or NET to work under a research scientist in research institutes like CSIR, NAAB & different universities in India or you may clear GMAT and apply for research fellowship in foreign countries along with Ph.D. All the best!

Explanation is just for your reference to make you understand the concept. When you talk about 12th board physics the question paper consists of derivations and problems to its tip and very less questions on explanation. But chemistry part 1 paper is some what like physics but part 2 has major theory which you can prepare by making charts for organic part. But you must read the explanation too just to clear your concepts. Don't by heart it.
