If you want to join IT industry there are following options (a) BCA - MCA (b) BTech CSE (c) BSc MSc CS (d) Certification on software / applications etc (e) Certification on Hardware related systems. If you confirm your exact requirements, specific suggestions can be provided.

There are classes which have short term computer accounting courses
eg ICA institutes courses like Certified industrial accountant
They teach sap tally and others
there are other classes as well
You can even individually join classes for advanced excel and tally which will be beneficial

Since you are keen in acting,you could pursue a degree in Performing Arts .The Bollywood industry is full of successful people who have no connections in the Industry .If you are good and have a passion in acting then you could pursue it as a career as well. Offlate the TV industry also has to offer a lucrative career in multiple areas of performing arts.
Alternately you could pursue BBA/Mass communication and peruse a diploma/certificate course in acting and thus minimize the career risk by keeping career option outside the entertainment industry also open

No IIMs don't offer MBA in media and communication.

Theoretically, there is no easiest course in B Tech or BE. Practically if you opt for a course, in which least number of students would like to join, probably you need not compete with highly intelligent guys and relatively may be little easier.

If you are not particular about an engineering Degree, why don't you try for career oriented courses like Printing technology, Hotel management, food & nutrition, Digital imaging and so on?

you can be after getting yourselves registered in that particular country medical council. for this you need IELTS 7 band in all and also have to write a competency exam
