fter completing your PG Diploma in Canada, you can apply for a work permit, all international students can. Regarding the college you have to check your own profile, your percentile, IELTS scores, etc and see which college is the best fit for you. Some decent options could be Douglas College, Centennial College, etc. You have to check many other colleges too since you may not find the exact degree terminology.

The scores in JEE Mains (Joint Entrance Examination) can be used for the admission into the NITs (National Institute of Technology), IIITs (Indian Institute of Information Technology) and GFTIs (Government Funded Technical Institutes).
Once you get your score, the CBSE would conduct a counseling process by which you can get admission into these Institutes by JOSAA.
Some institutes like DTU, accept JEE main scores for admission but they don't participate in the counseling. You need to apply for those colleges separately.

It will not be profile switching exactly. I have done engineering as well as MBA. Engineering gives you technical knowhow whereas MBA gives you how to do that in a responsive and effective way with some tools. MBA in operations will have 50-60% of your technical study only. If you want to upgrade your skills both technically and managerially then this is the best combination. Your engineering knowledge will be used many times in MBA as well. Nowadays engineers are doing MBA more than M.Tech.
