This depends upon the undergraduate course you are pursuing and how much freedom your academic schedule offers you to pursue an internship. Most MBA students already have at least one internship before joining B-School that's mostly done between the pre-final and final year of graduation. However, you can do more than one internship too as per your interest, preferably on the lines of the domain you wish to specialize in during your MBA.

Finance is the best, if you are looking from a job perspective and growth. However, it is also the toughest one. You need to be really good at mathematics to choose finance. Finance never runs out of job openings.
Marketing is good as well. It needs relatively less effort while studying and good job opportunities in the market.
HR is good, but have least jobs as of now. There is lot of competition.
