This depends on the company. For example, companies that offer finance roles, they consider these marks. In fact this is their first criteria to shortlist people. Other companies do not give this level of importance to your 10th and 12th standard marks. They'll look at the marks mentioned in your resume, best five or any other.
Hope this helps.

Yes, you can take GATE. You must complete your undergraduate education. Also, if you are planning for a job in the PSUs, I think it will be quite difficult to get through this method.

A search on the net will lead you to many coaching institutes for IAS preparation. Getting a comparative study is also easy now-a-days. I want to tell you about some latest options for coaching. Many people are opting for online coaching classes which are affordable and good. They are conducted by experts so you need not worry about their effectiveness.
For example a visit to a site WizIQ.com will show that there are fifteen different types of courses (https://www.wiziq.com/courses/search.aspx?qry=IAS) available. You will get an idea about their popularity from the number of students taking the course. No harm in exploring.

Their overall success rate is 83.57% and 49 out of top 100 ranks who took Admission in BMS are from Pratham only. So it's like their are fairly good chances of being selected for BMS plus everyone would not be strange to you as many students from pratham got selected. The study material and the personality enhancement classes that they provide would not only help you in cracking JAT Exam but it will help in overall personality development that would help you in your future endeavors too.
