There are certain institutions which conduct their own entrance exams. For instance, Punjab Agricultural University is one of those highly esteemed universities which offers great prospects in B.Tech food technology merely just with their CET exam. This is just that you need to search the institutions which offer B.Tech in food technology without JEE. But, if one is seeking for admission in IITs or NITs, then surely JEE is the way.

Yes, she has to appear in order to get a good college, but if she want to take admission in some state governed college, then she might not appear for the JEE Mains. The college for which you have inquired about does take admission through JEE Mains and also through the state technical exam.

Hey,
Yes, you can easily take the admission, you need to get the affidavit for the gap years and clear the entrance exam for the course. An affidavit is important for the gap year as the reason for the gap is mentioned in it and universities demand it too.

Why aren't you seeking admission for B.Tech in CS (lateral entry)? You will get admission in the 2nd year. In case of B.Tech, you will get a degree within three years same as in case of B.Sc (CS). But remember here that B.Tech (CS) has more weightage than B.Sc (CS).
