Hey there,
It entirely depends upon your choice as the three fields are entirely different from their own perspective.
If you want to carry on your study in the specialized field to get your Masters, then GATE is a good option.
If you want to join work and put to practice what you have learned, then IES would be perfect.
If you have managerial skills and want to get into management field then doing MBA would be great.

The dates for registration vary every year. But, generally the registration would commence by the end of November or from the beginning of December.
The last dates may extend for a month or more.
So, it is advisable to follow up every University's website periodically, so that you may not miss the dates.

Yes, you can easily do that. I only prefer self study for the JEE Mains preparation as self study is the best and most effective study, the only thing you should do is to get the blueprint for the JEE paper and study accordingly.

As you are doing Diploma in mechanical, you have plenty of scope other than studying BE. If you are not interested in studying BE then it would better enough that you don't go for it.
As you have done Diploma, you can go for a job because, nowadays, there are more opportunities for the one who has completed Diploma in both private sectors as well as public sector.
You can also do a short-term course which would help you to enhance your study career. The short-term courses which you can opt for to enhance your career are mentioned below:

Students can do MBA at Faculty of Management Studies( FMS), Department of Financial Studies (DFS MBA (Financial Management), Department of Commerce Delhi School of Economics MBA International Business or Human Resources MBA(Business Economics) from Department of Business Economics . MBA admission in all these departments is through CAT. In addition SRCC conducts Global Business Operations (GBO) equivalent to MBA. SRCC conducts its own entrance examination for GBO.
