The definition of best varies from person to person and is influenced by personal inclinations and ones strength for e.g. some people might to go with regular stream like CS, mechanical and some might go with not so common branches like Robotics, petroleum, mining.
Don't opt branch just because of college, but opt for the branch that you love the most and are most passionate about and analyze the future work conditions, scope and growth prospects before taking admission
You can also opt for psychometric test comprising of Aptitude, personality and career interest to clear confusion.

You don't think you are quite late asking this. You should do class 12th and 11th course together. Means in day time either do class 12th and at night class 11th and vice versa. For IIT during doing class 11th and 12th course do questions for IIT too. By this you will be able to score good in IIT too.
