The requirement of certificates/degree or qualification of any sort entirely depends on the profile & industry that you wish to pursue.
The basic eligibility in the tourism industry at large is at least a graduation in any field.
In some cases one needs to have some qualification to be able to fulfill one' job responsibilities and increase chances of selection such as:
-Reservation Agent-needs qualification with knowledge of software
-Chef- needs qualification with knowledge of various kitchen procedures & cooking method etc

As mentioned in other answers here , Quality matters not quantity also it depends on what your target is (What exactly do you mean by 'crack IIT')
Also in class 11th the topics are not totally formula based so understanding concepts is important .The time is directly proportional on the extent of grasping ability .But the topics of class 11th have a relatively lower weightage so no one is expecting anything more than 4-5 hours from you . But still you should take advice from your teachers on this as their teaching methods will also affect the effort you need to put in 'self study'

Computer Science is applied mathematics. You cannot understand functional programming with out having an idea about Lambda Calculus. If you genuinely like technology, there is no reason why you hate Mathematics, may be you are not taught well, may be you are just holding yourselves back for no reason, I will suggest you to reconsider your fear/hatred towards it.
Find a course called "Introduction to Mathematical Thinking" on Coursera
and finish it, many claim that it makes them love Math after that, may be you are one of those, give it a shot.

Tough is a relative word. Anything that is interesting should not be tough. So if you have interest in science then just go for it. Otherwise look for a stream that you find more interesting. These subjects are really very interesting. You just have to manage your studies and be persistent with your assignments.
I will suggest you to read and prepare the subject matter from the standard books(not from any institute notes/senior notes), which will help you to gain deeper understanding on it. Take time to absorb and grasp the topics. You may take external help from teachers, seniors, friends to clear your doubts.
