Getting a commercial pilot license and getting to learn flying in defense are two entirely different things. There are plenty of flying schools in India and you can choose anyone. Eligibility is to pass class 12th with PCM.
You can join defense forces by appearing for NDA entrance exam conducted by UPSC.

There are any good engineering colleges apart from IIT/NIT or BITS Pilani. You can consider DTU, VIT, Thapar University and MIT Manipal for admission. There are many central universities that are also decent. The colleges in Delhi NCR under AKTU( formerly UPTU) like AKG, KIET, JSS, GCET can also be looked upon.You can choose from them as per your preference of streams and location.

I am not sure if you are talking about IHM or IIHM. IHM is government one under NCHMCT, Ministry of Tourism whereas IIHM is a private one.
If you are talking about IHM, then IHM, Pusa(Delhi) and IHM, Dadar (Mumbai) are equally good. However, if you are talking about IIHM, then Kolkata seems to be better.
