A saucier chef is a culinary team member responsible to prepare sauces, gravy, soups and sometimes pasta dishes for restaurants, hotels or other hospitality businesses.He does a lot more than just create sauces. He is also responsible for preparing hot hors d'ouevres and stews, and handling sautéing tasks. A saucier is allowed to be creative in his job, but is required to work under tight deadlines. Since the majority of food prepared by the saucier is hot, he must work quickly and follow protocols to ensure the food's safety and integrity is not compromised.

There are some university or institution which take admission in hotel management without any entrance examination, You may opt for such institutions. Few of the institutes would be:
-Mannipal university
-Bharti vidya peeth
-UEI Global etc
However, to take admission in good institution you should appear in entrance examination.

It would be advisable to try with entrance examination.In case if you are unable to clear the entrance examination then you may opt to take admission in Institutes where no admission test is required.

Yes, it is quite possible to pursue a course in HM without a HM education background.
The eligibility depends on the type of course that you wish to pursue , the details of some courses is stated below:
Diploma –Class 10th pass from a recognised board with minimum 40% marks.
Bachelor’s Degree: Class 10+2 examination with at least 50% marks.
Post-graduation degree: Bachelor’s degree from a recognised university with at least 45% marks.
Graduate & PG programs may also require you to appear in entrance exams such as NCHMCT,AIMA UGAT, E-CHAT etc.
