The main sections of Bank PO exam are:
Test of Reasoning/Mental Ability/Aptitude:Consisting of two sub sections Verbal (Number Series, Alphabet Series, Analogy, Decision Making )and Non Verbal section (Mirror Images, Grouping Identical Figures, Embedded Figures etc)
Quantitative Aptitude: This consist of topics- Number System, HCF/LCM, Decimal Fractions, Time and Work, Percentage and many more.
English: The section consist of Verb, Adverb, Sentence Rearrangement, Vocabulary etc.
General Awareness: Current Affairs , Major Financial/Economic News, Sports, Inventions and Discoveries etc.
There are many books that can be referred and need not look into specific curriculum reading yet may refer to the ones like Aditya's Bank PO all in one book, For Quant you can refer to books of authors like Abhijit Guha, R.S. Agarwal, and many more like wise.

As you asked you can pursue courses in parallel and there are a lot of options as i am listing below the most prominent ones from the job point of view:
1. Java/J2EE - The server side software development of web is mostly done by this most secure language option. Most of the banks in India and abroad implement their web applications using Java/J2EE only.
2. Oracle/Mysql/DB2/DBA - This is one of the most reliable course options but you will not get any work of software development on its basis, yet you can continue doing it if you have interest in DBMS.
3. CCNA/MCSE - These networking certifications can employ you as a network engineer and again even in the recession period these were the most reliable career options, if not most exciting.
4. .NET/PHP - These are popular languages which are direct counterparts of Java. These are mainly used for light weight application development on the server side and client side. .NET is also easy to master compared to the long Java Library.
Except this the less exciting options include IBM Mainframe, SQT, IBM Lotus, etc.
