For courses like hotel management, there is no need for any entrance exams.
There are many institutions which give admission to the candidates without any exam and also without considering their board percentages.
The only thing you should have is money which you can spend for the large fees of those institutions.

It means different things to different people and also across organisations. Higher management jobs always involve and perhaps will continue to have interviews by a panel of experts or search committees. This perhaps is inevitable since many traits of the probable inductee could be known/ inferred/ found out only during one on one interactions. Similar is the case with interviews in hotel jobs. Front desk, kitchen, customer relations.
