Hello,
Master of Education or M.Ed is a two year course that can be done after B.Ed. This gives a person specialisation in techniques of teaching. But unfortunately, it does not give any boost to career though it enhances CV. Of course it enables one to pursue doctorate in education. There is no least preference towards any course but then there is high preference and propaganda towards some top courses like medical, engineering, chartered accountancy and MBA.
This drives majority and influxes the students into these branches.
As we have seen the job prospects and overall opportunities across industries have been immense for above courses and so are the fat packages being rolled out which lures majority of students.
This now creates an imbalance and supply demand ratio is disturbed.

You can study psychology after 12th with science, it totally depend on your interest. If you are interested to study psychology you can go for BA (Bachelor of Arts) and you can take psychology as a subject in BA.

This is another interesting query. Fundamentally, it means doing two courses simultaneously. Of course, it can be done. But the issue is not only theoretical possibility. Its actually question of ability to find time for studies for two different courses. But then, one can save on time. Even to the extent of as much as two years. Say Masters in subject of graduation and B.Ed. Surely, one can pursue this arrangement. BTC is acronym for 'Basic Training Course'. This is a two year course and these who pass out can be employed as teachers in Primary schools.
